November 16: Plant Based Cooking for the Win! 
@ Kendall College (National Louis University) on Halsted and Chicago Ave.

Even if you still want to eat meat, simply adding in more plants to your current diet can make profound strides in our health. Plant-based eating isn’t about being vegetarian or vegan; it about getting more plant into your diet (think vegetables, fruits, nuts, seeds, legumes and some whole grains.) The focus of this class is on how to bring more plant-based goodness into our meals while still feeling satiated and satisfied. You won’t miss the meat!

We’ll talk about all these factors while we cook:

  • why eat mostly plants?

  • eating the rainbow

  • factors that affect digestion

  • meat considerations

  • what are Plant Foods?

Recipes we’ll create:

  • Butternut Squash Sauce (served over pasta, gf option available)
  • Coconut, Mushroom or Eggplant Bacon
  • Salad with Herbed Pesto Dressing
  • Vegan Chocolate

Classes led by Culinary Nutrition Expert and Integrative Health Coach Monique Costello, founder of Happy Eats Healthy, and are based on whole, clean food with a focus on anti-inflammatory ingredients. Being Healthy is Finally Delicious!
