These cookies whip up in a snap, bake in 15 minutes, and eat like a slice of banana bread. It’s glorious and they’re gluten-free!! BAM!

1-banana Banana bread cookies
1 ripe banana
2 tbsp maple syrup
1/2 tbsp coconut oil, softened
2 tbsp nut butter
1 egg
1/4 cup almond flour
1/4 cup coconut flour
1/4 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/4 cup dark chocolate chunks
Topping: walnuts, pecans, maple flakes or a sprinkling of coconut sugar
Directions: Preheat the oven to 350 degrees and line a sheet pan with parchment paper.
Mash the banana in a medium-size bowl. Mix in the egg, almond butter, maple syrup, and coconut oil.
Add the almond flour, coconut flour, baking powder, baking soda, and salt and mix well. Add the chocolate chunks.
Scoop the batter into 9 mounds and flatten slightly. Sprinkle with nuts and maple flakes. Bake for 15 minutes, the bottoms should be golden brown. Cool slightly. Store in an airtight container or freeze.
