If you need an endorsement…. I’ve made this salad three times in two days. It’s quite simple and comes alive with the fresh herbs, use all that you have!
Also, this is a loose recipe…. be casual. If you don’t have chive flowers, use chives. If you don’t have French radish, use any other, but toss them in water for a minute to soften their bite.

Peach Avocado Garden Salad
A peach, diced
An avocado, diced
A few French radishes, sliced
A shallot, thinly sliced
A good handful of as many fresh garden herbs as you have (ideally edible chive flower, mint, dill, oregano and cilantro)
Juice of a lemon
Olive oil
Flaked salt and pepper
Pepitas toasted in a bit of ghee
Clean and slice your fruit and veggies. Layer in a shallow bowl. Drizzle with the lemon and olive oil. Top with flaked salt and black pepper. Toss, top with toasted pepitas and savour.
I ate it with chips and endive lettuce cups a few times, and as a side salad the other. Could be great topped with a little grilled meat, too. You do you!
