I found myself with a couple of ginormous ginger roots. I can’t even remember why. But I needed crystallized ginger for a cookie recipe so figured it was a good opportunity to use up the ginger and try something new.
This was my first time making candy ginger from scratch and I won’t go back to buying it. It’s easy peasy and delicious to snack on.

Crystallized Ginger (aka Candied Ginger)
1 lb fresh ginger
4 cups of water
2 + 1/4 cup sugar OR 2 cups honey + 1/4 cup sugar
Peel the ginger with the side of a spoon. Slice into thick rounds.
Boil the ginger slices in four cups of water for 30 minutes. Strain. reserving the water. Place ginger back in the pan with 2 cups of the reserved water and 2 cups of sugar or honey. Simmer for 30 minutes.
Strain out the simple syrup, reserve this for another recipe or cocktails.
Lay the candy ginger slices on cookie racks, and let dry for 30 minutes.
Dunk each slice in the remaining sugar. Place back on the racks and let dry 2-24 hours. Store in a sealed container.
