I’m all about transformer clothes, things you can wear a couple of different ways. ‘Transformer foods’ are similar and so creative because they give a base from which to create many different eating options.
This Avocado Black Bean mixture transforms from a salsa to also eat like a salad. Grab a bag of tortilla chips and enjoy as a snack or add a sliced chicken breast for a meal.

Avocado Black Bean Salsa/Salad
1 avocado
1 large tomato or 1 cup cherry tomatoes
1/2 cup red onion, small diced
1 can black beans, drained & rinsed
1 small bunch fresh cilantro or desired herbs, roughly chopped
Dressing:
1 lime, juiced
1 tbls olive oil
1 clove garlic, minced
½ tsp ground cumin
Salt and pepper to taste
Options to serve with: Bed of lettuce, tortilla chips, shredded rotisserie chicken, seared tofu
Directions:
Whisk the olive oil, lime juice, garlic and cumin together in a medium to large bowl. Add a pinch of salt & pepper to taste.
Drain and rinse the beans. Dice the avocado, tomato, onion, and cilantro, add to the dressing. Toss gently to combine. Adjust seasoning as desired.
Serve immediately or let sit for a bit to allow the flavors to meld. This salad will last days and continue to get tastier.
