This Avocado Toast Platter is a giant vessel of deliciousness! It’s not the first time I’ve created an avocado toast platter and I trust it won’t be the last, either.
I went crazy with accoutrements. toppers and food bling! It was the perfect way to use up a number of little odds and ends hanging out in my fridge after the long holiday weekend. It also doubles as a super healthy tray of fat -fueled goodness. Completely free of guilt! A guilt-free platter is a rare thing indeed, especially this time of year.
Go big: I find I always want a larger platter than I think I need. You can always fill the space with leafy greens, herbs or even with whole veggies or fruit (think mini pears, blueberries, blackberries or lemon and lime wedges!)

Avocado Toast Platter
2 avocados
1 small shallot
1 lime
Flaky sea salt
Accoutrements: I went big! Get creative with what you have. Here’s what’s on my platter:
- smoked salmon
- capers / olives
- crispy pancetta
- roasted red pepper
- roasted cauliflower
- watermelon radish
- sprouted lentils
- roasted beets (mini diced)
- pumpkin seeds
- hemp seeds
- pomegranate seeds
- orange segments
- golden raisins
- arugula
- tajin
- Sriracha
For the toast: Choose your favorite toast options (crackers work great too!). Here is what I used:
- GF Carrot Flatbread (recipe coming soon!)
- Pumpkin Spelt Four Biscuit (recipe coming soon!)
- Sweet potato toast rounds
Arrange:
Roast or quickly pan sear anything that needs to be cooked first (ie roast the red pepper, mince the beet and sear in ghee, etc.)
Finely chop the shallot, mash with the two avocados and squeeze half of the lime in. Place in pretty bowl, sprinkle with flaky sea salt, then squeeze on the second lime half over the top.
Choose a large platter, place the bowl of mashed avocado in the middle then scatter arugula around the platter. Place some of the ingredients in tiny bowls or plates- especially anything that you don’t want touching other ingredients (like the smoked salmon). I used use Chinese spoons for the smallest items like the seeds and raisins.
Add the toast points to the corners. Continue to add all your ingredients to the platter. Scatter in additional arugula if you need to fill empty space, or try splitting some of the ingredients into two separate piles.
Set out small forks, spoons for serving along with plates and napkins, Then dig in to this glorious platter!!
