This simple homemade dressing comes together in a snap and tastes like summer. Try it on salads or on my Watermelon Cucumber Skewers- talk about summer on a toothpick!
Basil Mint Dressing
4 tbls extra virgin olive oil
4 tbls lemon juice
1 tsp Dijon mustard (such as Grey Poupon)
small handful of fresh basil leaves (1/4 cup)
Small handful of fresh mint leaves (1/4 cup)
pinch of salt
pinch of pepper or cayenne
Blend all of the ingredients to a blender or mini food processor until smooth.
Taste, and adjust salt and/or pepper as desired. Store in the refrigerator for up to 1 week.
