Loose recipe alert! This Beet Hummus Dip doesn’t require measuring. Just toss the basics together, taste and adjust. That’s what I did!
Beet Hummus Dip
2 cooked beets
1/3- 1/2 cup coconut yogurt
juice of 1/2 lemon
small handful fresh mint
1 small stem of fresh thyme, picked off
pinch or two of pinch salt
1-2 tbls of extra virgin olive oil
Blend to combine in a food processor or blender. I liked a little texture left in this, but you can process more smooth.
