Appetizer can get a bit stale when you do the same guacamole and chips over and over again. I like anything avocado, but food rotation is important for both biodiversity of nutrients and boredom!
What I love about crostini is that it’s basically toast (crunchy, chewy bread). Who doesn’t love that? Plus you can top it with anything!
In this recipe it’s all about some quick-sautéed onions and apples that swirl over the creamy goat cheese smeared on pumpernickel toast. Yup, count me in. Take to to another level by using blue cheese! Bam.

Caramelized Onion & Apple Crostini
2 tbls ghee or olive oil
1 large yellow onion, sliced
1 green apple, diced small
1 tsp fresh thyme
1/4 tsp salt & fresh black pepper
Drizzle of balsamic vinegar
4 oz goat or blue cheese
Pumpernickel bread or a baguette
Pomegranate (seeds)
In a large skillet, heat 1 tbls oil over low heat. Add onions and cook, stirring often, for about 10 minutes or until starting to become golden in color.
Add the diced apples, thyme, salt and pepper, continue to cook for about 10 minutes until everything is soft and golden.
Remove from heat and let cool slightly.
Brush bread slices with olive oil and place under the oven broiler until lightly golden ~watch closely!
Smear the goat cheese on bread, add a spoon of apple onion mixture. Drizzle with balsamic vinegar and top with pomegranate seeds.
