A salty and sweet glaze perfect for roasted or braised meats, like this Wine-Braised Pork.

Cherry Miso Glaze
1 tablespoon olive oil
1 shallot, minced
1 garlic clove, minced
1 cup frozen cherries
2 tbls coconut sugar
2 tbls champagne vinegar
1.5 tbls white miso
1 Tbls Dijon mustard
1/4 cup water
pink salt and pepper to taste
Saute the shallots and garlic in the olive oil. Add the cherries, sugar, vinegar, miso, mustard and water. Bring to a simmer for 5 minutes. Taste and adjust seasoning.
