I’m always seeking to create quick and simple sweet treats to serve at my retreats. If you scroll IG, you know chocolate recipes are easy to come by.
But not everyone can or should eat chocolate. Chocolate has just enough caffeine to disrupt sleep. What I like about this delightful bar, which I’m calling Coconut Slice, is the versatility of stopping with chocolate for some and coconut butter for others. Plus it’s dairy-free and gluten-free. Everyone wins.
Place the Coconut Slice ingredients in the food processor. Pulse to combine and pat in a pan. Drizzle with the chocolate or coconut butter. It’s a crunch, chewy, delightful bite that satisfies.

Coconut Slice
2 cups gf rolled oats
2 cups almonds, toasted
2 cups coconut flakes, toasted
~12-20 Medjool dates, pitted and rough chopped (enough to make the mixture sticky)
⅓ cup coconut oil, softened but not melted
¼ cup maple syrup or honey
1 tbs vanilla extract
A pinch or two of pink salt
1/3 cup jam (I’ve tried with fig jam and a Jalapeno jelly)
1/2 cup dark chocolate + 1 tbls coconut oil or coconut butter; or a mixture of both
Optional: Flaked sea salt.
In a food processor, pulse until combined: the oats, toasted almonds and coconut flakes, a dozen dates, coconut oil, maple syrup, vanilla and a pinch or two of pink salt. The mixture should be sticky enough to hold together. Pulse in a few more dates if it feels too dry.
Crinkle up a piece of parchment paper and smoosh it into a cake pan or similar-sized pan so that the paper covers the bottom and sides of the pan. Pour 3/4’s of the mixture into the pan and pat down.
Spread the jam over the top and then sprinkle the remaining Coconut Slice mixture on top of the jam. Press down slightly.
Melt the dark chocolate with 1 tablespoon of coconut oil, or simply warm the coconut butter until runny. Pour over the top of the coconut slice and smooth across. Sprinkle with salt flakes if desired. Place in the refrigerator for about an hour to firm. Slice and enjoy.
Store in the refrigerator for up to a week or freeze for a month.
