Lemonade is the only summer quencher!
I’m crazy for lemon. And I’m a pretty big fan of coconut. Why have I not blended these together before?
It’s a perfect connection and super refreshing. Plus, full-fat coconut milk is so good for your skin, hair, nails, and your brain.

Creamy Coconut Lemonade
1 cup full-fat coconut
2 cups water
1/4 cup honey
1/2 cup lemon juice (took me 1.5 lemons to get this amount of juice)
a pinch of pink salt
Option: Mint leaves on top
Directions:
Canned coconut milk separates; whisk the full can together before beginning. You’ll use 1 cup in this recipe and reserve the second cup in the refrigerator for another use.
Place all the ingredients in a blender, blend until creamy.
Pour into two glasses filled with ice. Top with mint or other herbs if desired.
