These veggies have a secret ingredient that takes them from ho-hum to wow. This ingredient is typically found in breakfast items or sweet treats. Adding it to a savory dish gives the vegetables depth and just a hint of sweetness and warming spice. Plus this ingredient helps to balance blood sugar and fight infections.

Curried Vegetables
1 onion, diced
3 garlic cloves, minced
1 tbsp coconut oil
1 tsp curry powder
1 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp ground turmeric
1/2 tsp pink salt
Fresh black pepper
1 small head of broccoli, cut into small florets
1 zucchini
3 cups green beans, cut in half or thirds
1/2 head cauliflower, cut into small florets
1/2 cup frozen organic peas
1/2 tsp Garam masala
Fresh cilantro, optional
Melt the oil over medium heat. Add the onion, saute about 5 minutes to soften. Add the spices, stirring well.
Add the zucchini and 1 or 2 tablespoons of water to keep spices from burning at the bottom of the pan. Add green beans and sauté about 5 minutes, stirring occasionally.
Deglaze the pan with about 1/3 cup of water Add cauliflower and broccoli. Stir well, cover and cook until the vegetables are tender, about 10 minutes. Stir in the garlic.
Sprinkle on the frozen peas and garam masala. Turn off the heat and let sit to warm the peas.
Top with fresh cilantro.
