There isn’t an olive oil recipe I don’t like, including adding it to baked goods. So I didn’t even bat an eye when I came across this Olive Oil Cookie. I walked right into the kitchen to make them.
The original recipe calls for regular flour for which I substituted in a gluten-free flour. It definitely changed the cookie. At first, I didn’t think I liked these little Olive Oil Gluten-Free Chocolate Chip Cookies, but they grew on me. The flavor is darker thanks to the coconut sugar. There is an interesting crunch on the outside with a softness on the inside.
A couple of key moves come into play here- one is to plan ahead to rest the dough. This allows the moisture to soften and hydrate the gluten-free flour which helps to remove the grittiness that comes with gf treats. The second key is to tap the cookies down after baking them and put them back in the oven to rest as the oven cools down.

Gluten-Free Cherry Chocolate Chip Olive Oil Cookies
7 tbls olive oil
5 tbls cold water
1/2 cup coconut sugar
3/4 tbls vanilla
1/2 cup gluten-free flour
1 tsp baking powder
1/4 teaspoon pink salt
1/4 cup dark chocolate, roughly chopped
1/4 cup dried cherries, roughly chopped
Optional:
1 tbls cacao nibs
Salt flakes to top
Whisk together the olive oil, water, coconut sugar and vanilla until well creamed. Mix in the flour, salt, and baking powder until well combined. Fold in the chocolate, cherries and cacao nibs (if using).
Rest the dough for 30 minutes in the refrigerator.
Preheat the oven to 350 degrees. Scoop the cookies into 2 tablespoon-sized balls and set on a parchment-lined sheet pan. Bake for 14 minutes. Turn the oven off and remove the pan from the oven. Use a wide-bottomed coffee cup to flatten the cookies down. Sprinkle with flaked salt if using.
Place the pan back in the oven and let the cookies rest there for 30 minutes while the oven cools down. They will bake a bit further, creating a crisp exterior and chewy interior.
Remove from the oven and let cool slightly before enjoying.
