I feel bad for tofu.
It’s get a bad rap. People pick on it, sneer at it and turn their noses up at it.
Admittedly, I was one of those people. Maybe it’s just the name: ‘tofu’. Or perhaps it was limiting beliefs ingrained from my youth, or because friends didn’t like it, or I thought it was only for hippies …. could have been any numbers of things that scowled my mind against it.
But honestly, it’s a pretty innocuous ingredient. Not much flavor, which leaves you wide open for possibilities. Slice it, dice it, chunk it or scramble it – pretty damn versatile really.
So what’s stopping you from working with tofu? Perhaps today, this Gyro Tofu Bowl recipe, is the day.

Gyro Tofu Bowl
1 block of firm tofu
2 tbls olive oil
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp ground cumin
1/4 tsp ground cinnamon
Pinch of cayenne pepper
1 tsp salt
1 red pepper, sliced
1/4 of a red onion
1-2 cups fresh spinach or lettuce (whichever you prefer)
2 tbls fresh mint & parsley
Assorted olives & feta cheese (choose DF feta if preferred)
Optional: pita or flatbread
Dill Tzatziki Sauce
1 cup Greek or non-dairy yogurt
1 English cucumber
1 lemon, zested and juiced
1 garlic clove
Fresh dill
Pinch of pink salt
Directions:
Pat the tofu dry and slice 1/2 inch thick. Mix 2 tbls olive oil with the minced garlic and dried spices (oregano, cumin, cinnamon, cayenne and pink salt). Add in the tofu slices and carefully toss (add in another drizzle of olive oil if needed.)
Heat a skillet over medium heat, fry slices until golden and crispy on each side. Slice the red pepper, toss the slices into the pan to sear.
While the tofu is cooking, grate half of the cucumber into a medium-sized bowl. Add in lemon zest, juice of one-half lemon, minced garlic clove, yogurt, fresh dill, a pinch or two of salt. Mix well, taste and adjust the seasoning as desired.
Thinly slice remaining cucumber. Thinly slice the red onion.
Tear the lettuce into bite-sized pieces, place in a big bowl or serving platter. Layer in the seared Gyro Tofu and red pepper slices. Add cucumber slices, red onion, olives and feta cheese. Drizzle the Dill Tzatziki sauce over the top. Tear a little fresh mint, parsley and dill over the top. Spritz the bowl with olive oil.
