Snack bar. Energy bar. Protein bites. Granola bars. Energy balls, fat bombs, bounty, breakfast, and power bars….. so many different names but similar delicious snacking.
So why not add another snack bar to your recipe database? These Happy Snack Bars hit all the high notes: Crunchy, chewy, hearty, protein-filled, gluten and dairy-free. Perfect for an on-the-go breakfast, a mid-day snack or a simple dessert.
This is another great recipe to mix and match ingredients, so use what you have. I like to store them in the fridge/freezer, it also helps to keep the bars well-bound together.

Happy Snack Bar
3/4 cup oats
1/2 cup almond flour
1/3 cup tapioca flour
3 tbls coconut sugar
1/2 to 1 tsp ground cinnamon
1/2 tsp baking powder
pinch or two of pink salt
2 tbls hemp seeds
2 tbls sesame seeds
1 tbls ground flax seed
2 tbls sliced almonds
1/4 cup raw pumpkin seeds
1/4 cup coconut oil, melted
1/3 cup maple syrup
2 tbls crunchy nut butter
1 tsp vanilla
1/2 cups chocolate chips (choose a df option as desired: I like Hu Gems)
Flaked salt
Optional: 4 tbls collagen powder
To make the Happy Snack Bars:
Preheat the oven to 350 degrees. Line a square baking dish with parchment, ensure the paper goes up the sides a bit. My dish size was about 7×7″. A small dish will yield a thicker bar, and a bigger dish will yield a thinner bar.
Whisk together all the dry ingredients: the oats, almond flour, tapioca flour, coconut sugar, cinnamon, baking powder, salt, all the seeds and nuts.
Melt the coconut oil. Stir in the almond butter, vanilla and maple syrup. Stir in the collagen powder, if using. Pour this mixture into the dry ingredients and stir well.
Pour into the parchment-lined pan and smoosh to level the batter. Bake until slightly golden on top; about 20 minutes. Remove from oven and sprinkle with the chocolate chips. Once the chocolate becomes glossy, use an off-set spatula or the back of a spoon to spread the chocolate across the top. Sprinkle with flaked salt.
Let the Happy Snack Bars cool before cutting. Store in the refrigerator or freezer.
