It SHRINKS?!?!?!?!
Seriously. Spinach is loaded iron, fiber, vitamin c and water. When you sauté it, it’s going to shrink down to nothing. 1 lb of spinach, which is about 10 cups, is going to sauté down to just a little mound.
Adding lemon to the spinach helps your body absorb the iron better.

Lemon Garlic Sautéed Spinach
1 lb spinach
3 garlic cloves
1 lemon
1 tbls ghee or olive oil
Pink salt and black pepper
Thinly slice the garlic. Heat the oil in a medium to large skillet over medium low heat. Add garlic and cook, stirring, until fragrant but not brown, about 30 seconds.
Stir in spinach, a pinch or two of salt and cracked black pepper. Cook about 2-4 minutes until just wilted, tossing often. Squeeze half of the lemon over the top. Serve immediately.
