I super dislike throwing out food. So what do you do with a bunch of lettuce that is on the edge? I’ve previously shared my love of making flavor bomb concentrates here on the Happy Eats Healthy Blog. It’s a great way to save food using your freezer.
Using the same concept, make a simple Lettuce Pesto to eat right now. This Lettuce Pesto is so easy and flexible, you can work with whatever nuts and seeds are in your pantry. Heck, throw in a few herbs if want, but I found they weren’t needed.
Just toss, pulse and enjoy! What are you eating this Lettuce pesto on?

Lettuce Pesto
3 cups packed lettuce
2 garlic cloves, roughly chopped
5 tbls extra virgin olive oil
2 tbls pine nuts (or whatever seeds you have on hand)
1 tbls Parmesan cheese
Toss the lettuce, garlic, nuts and cheese in a food processor, pulse to break down.
Drizzle in the olive oil while continuing to run the processor. Process just long enough to combine and achieve desired texture.
Use immediately or store in the refrigerator for up to 4 days.
Use as a dip, on roasted veggies, grilled meats or in grilled cheese sandwiches.
