Congee is the perfect dish to reach for when your body needs gentle nourishment. It’s warm and comforting and easy on the system. Plus it’s a great recipe that’s made with 2 ingredients from your pantry.

Nourishing Congee
1 cup rice
8-10 cups chicken or vegetable broth
+1 tsp sesame oil (optional)
Topping ideas:
Green onions
Fresh grated ginger
Sesame oil
Soy sauce
Toasted sesame seeds
Fried Egg
Pork (pre-cooked or very thinly sliced and added to the pot to cook for a few minutes just before scooping into bowls)
Squeeze of lemon or lime.
Rinse the rice. Bring to a boil in a pot with the water and oil. Set the temperature to medium low, tilt the lid just slightly to allow steam to escape. Simmer for about an hour or more until it reaches a creamy thick porridge consistency.
Stir often and add additional liquid if the porridge becomes too thick. The texture of this nourishing congee should be velvety. Taste, add salt or tamari as needed.
Place in bowls and top with preferred toppings.
Instapot: set your Instapot for about 20 minutes and let the steam release naturally.
NOTE: Try this nourishing congee with different grains, like barley or quinoa (adjusting cook time accordingly). Get creative with toppings- try it with a drizzle of maple syrup, cinnamon and berries for breakfast.
Below, I added roasted veggies, ghee and lemon to my leftover congee. Made for an amazing and filling breakfast!
