Overnight oats have been around for a few years, so I’m not inventing a new dish here…. rather just putting my spin on it with this Nutty Cherry Overnight Oats. Delicious!
Loaded with protein, fiber and good fat, the overnight oats stay for days in the fridge and travel well too. Mix it up, store it in the fridge, snap a photo and share it on IG & FB; remember to tag @happyeatshealthy!

Nutty Cherry Overnight Oats
1/3 cup plain thick yogurt ~classic Greek or dairy-free like CocoJune or Culina
2/3 cup milk of choice (try a DF version like coconut or almond)
1-2 tbls maple syrup or honey
1/2 tsp vanilla extract
1/4 tsp almond extract
Pinch of pink salt
1/4 cup toasted nuts/seeds (hazelnut, brazil nuts, pumpkin seeds- use a mixture and get creative!)
1/4 cup fresh or frozen cherries, pitted and chopped
1/2 heaping cup rolled oats
1 tbls chia seeds
Optional: 1 scoop of collagen powder
Directions:
Add the yogurt, milk, sweetener, extracts, and pinch of salt in a quart mason jar, shake or whisk well to combine. Add in the remaining ingredients and mix again.
Refrigerate overnight. Enjoy chilled.
