There is a sauce called Mojo de ajo, which translates into a sauce of garlic. This simple sauce is just roasted garlic, orange and lime. Aside from those ingredients, add a variety of herbs to change it up.
My chef-turned-food scientist friend brought 9 heads of roasted garlic over for a party. I was the happy recipient of three remaining heads. This Roasted Garlic Herb Sauce was a great use of one of these heads. If you don’t have a roasted garlic head on hand, toss one in the oven and let it roast while you gather the rest of your ingredients.
Use on roasted veggies, grilled meats, add a splash to soups and stews or as a dip.

Roasted Garlic Orange Herb Sauce
1 head roasted garlic
1/2 cup olive oil
1 cup orange segments (I 4 used mandarin oranges)
2 handfuls of fresh parsley (feel free to use any fresh herbs)
juice of 1 lime
1/4 tsp salt
pinch or two of black pepper
Squeeze the roasted garlic from the bulb into a blender. Add the remaining ingredients. Blend until combined and creamy.
