Holiday Baked Brie
- 1 wheel brie or camembert
- 1 pkg diced pancetta
- ⅓ cup raw walnuts
- 3 medjool dates, chopped
Turn oven to 350 degrees. Carefully slice off the rind (only) on the top of the brie, set the brie in an oven proof dish.
Place the diced pancetta in a small skillet, turn the heat to medium low. Cook until nearly done.
Chop the walnuts and add to the pan, cook to brown the walnuts. Remove from heat, tilt the pan, push the nuts and pancetta towards the top to let the grease pool at the bottom.
With a slotted spoon, scoop out the pancetta and pour over the top the brie. Sprinkle with the chopped dates.
Bake for 10-15 minutes until brie is soft. Test by pushing a knife into it, it should slide in very easily.
Remove from heat and enjoy warm with crackers or crostini.
