- 1 lemon, juiced
- 1 large orange, juiced
- 1 shallot, minced
- 1 tsp dijon mustard
- 1 tbls maple syrup
- 1/4 cup olive oil
- salt and pepper to taste
- About dozen brussel sprouts
- Couple handfuls of torn kale
- 1/3 cup toasted almonds or other seeds
- 1/3 cup grated cheese (try Parmesan, Asiago or Manchego)
In a large bowl, whisk together the lemon, orange, shallot, mustard and maple syrup. Slowly drizzle in the olive oil while whisking. Add a few pinches of salt and pepper.
Shave the brussel sprouts using a mandoline, a food processor or by hand with a knife. Toss the sprouts, and kale with the dressing. Scatter the almonds and cheese on top.
Add salt and pepper as needed.
