Viral Cottage Cheese Bread

Viral Cottage Cheese Bread {gf}

‘An amazing bread loaded with protein.’

At least that’s what everyone was saying about this Viral, Gluten Free Cottage Cheese Bread. I’m always on the hunt for gluten-free bread options and this one kept crossing my path.

I was hesitant for two reasons: I prefer dairy and egg-free recipes because it allows me to accommodate more client needs. And cottage cheese is fairly processed, so I prefer to limit it. But I gave it a go anyway.

This Viral Gluten Free Cottage Cheese Bread is easy peasy. Blend, or simply stir together, the ingredients, shape on a pan, and bake.

I tested out making this in the blender, food processor and just stirring everything together by hand in a bowl. It all works. Blending and processing breaks down the oats, leaving the final texture a little more refined and more similar to classic bread. Stirring by hand gives more texture and heartiness. You can see the texture difference in the photos at the bottom of this post. Neither is right or wrong- it’s all preference.

But one thing I added to this Gluten Free Cottage Cheese Bread is a mixture of nuts, seeds AND golden raisins. Those golden raisins create little pockets of sweet gooeyness that lighten and brighten the bread. I wouldn’t skip this!

This Gluten Free Cottage Cheese Bread is a hearty, protein-packed bread that I would make again. I’m not sure I would call it AMAZING. But it’s super, super good and really fills that bread need.

Gluten Free Cottage Cheese Bread

2 1/2 cup rolled oats
1 1/2 cup cottage cheese
2 eggs
2 Tbls flax seeds
2 tsp baking powder
1/2 tsp salt
3-4 tbls golden raisins
1/3 cup of nuts/seeds (I use a mixture of walnuts, pepitas, sunflower and sesame seeds)
Optional: 1 tsp dried herbs. Olive oil and flaked salt for the top.

Makes 1 loaf ~ about 8 servings.
Preheat the oven to 350F.

In a food processor or blender: Pulse the rolled oats, salt and baking powder to break down the oats. Add the cottage cheese, eggs and flax, pulse together. You may need to stop and use a spatula to fully mix. Stir in the nuts/seeds and herbs, if using.

In a bowl: Stir together the oats, salt, baking powder and ground flax. Stir in the cottage cheese, eggs and nuts/seeds or herbs, if using.

Line a sheet pan or loaf pan lined with parchment paper. Either form a basic loaf shape out of the dough on the sheet pan or smoosh it into the loaf pan. Drizzle with olive oil and sprinkle with flaked salt.

Bake until lightly golden brown and the middle springs back when touched, around 30-40 minutes. This timing may depend on whether the Viral Cottage Cheese Bread has been formed taller, flatter or in a bread pan.

Allow to cool before slicing. Store in the refrigerator or wrap individual slices and place in the freezer.
