Homemade baileys

Bailey’s Irish Cream Mocktail {v, gf}

Anyone else go through a phase where you couldn’t get enough Baileys? Half coffee – half Baileys felt like the perfect way to start the day.

St Patrick’s day and coming up and I will be running a retreat in Zion National Park. Thought it would be fun to have a little Irish mocktail after our hike that day and here’s what I came up with. It’s addicting for sure! If you aren’t alcohol-free, a dab of whiskey will help you find that pot-o-gold at the end of the rainbow.

Bailey’s Irish Cream Mocktail

3/4 coconut milk (full fat)
2 tbls sweetened condensed coconut milk (or maple syrup)
1 tbls espresso (decaf espresso as desired)
1/2 cup water
1 tsp vanilla
1/4 tsp cacao powder
Pinch of cinnamon
Pinch of pink salt
Few pinches of orange zest
Optional: 1 shot of whiskey you are imbibing.

Whisk together all the ingredients or place in a blender and blend on low.
Pour over 2 small glasses with ice and sip away.

Spiced Orange Mocktail

Spiced Orange Mocktail

6 mandarin oranges
1/2 cup water
2 tbls coconut sugar
1 cinnamon stick
1 black cardamom pod
5 peppercorns
3 whole cloves
1 star anise
For the mocktail: sparkling water

Zest the oranges in a small pot. Squeeze in the juice. Add the remaining ingredients and bring to boil. Turn off the heat, cover and let steep about 10 minutes. Cool.

Store unused syrup in the refrigerator.

For each mocktail: fill the glass with ice. Add the spiced orange syrup to half of the glass, top with sparkling water. Stir and enjoy with a cinnamon stick.

Try it warm: Warm the syrup, fill a cup half full with the orange syrup. Top off with warm water. Sip and enjoy with a cinnamon stick.

Pineapple Lavender Mocktail

Lavender Simple Syrup

  • cups water
  • 2 Tbls dried lavender
  • 1 Tbs dried Cornflower (optional, this helps give color to the syrup)
  • 1/2 cup honey

Simmer the water, lavender and cornflower (if using) for 20 minutes. Mix in the honey and let cool

Lavender Pineapple Mojito

  • 6-10 mint leaves
  • 1/2 lime
  • 2 tbls lavender simple syrup
  • 3 tbls pineapple juice
  • club soda

In a tall rocks glass, squeeze in the lime and muddle with the mint at the bottom of the glass. Add in ice cubes, lavender syrup, the pineapple and top off with club soda. Enjoy!
