8 oz mushrooms, cleaned and sliced
3 small cloves of garlic, minced
1/2 cup red or white wine
Optional: couple slices of pancetta (or bacon), chopped small, and 1 pat of butter
Heat a skillet over medium heat.
->If using, cook the pancetta until nearly crispy. Pour out most of the grease if there is any. If not using meat, add a spoon of oil to pan.
->Add (or begin with) the mushrooms, saute 5-10 minutes until they begin to soften. Add in the garlic and cook for a minute. Deglaze the pan with the wine.
->Add a pat of butter if using. Continue to simmer until the wine begins to reduce. taste the mushrooms, add salt/pepper to taste.
Use as a pizza topping, over grilled meats or as a side.
