Strawberry N’ice Cream


Frozen bananas are the star in this Nice Cream recipe; I always keep a few in freezer for those days when I need an ice cream-like treat. Once frozen, the bananas blend up sweet and creamy, reminiscent of a soft-serve texture. Blend them up alone or with other ingredients for a super simple dairy-free/vegan snack that satisfy any ice cream craving.

I’m not here to try to fool anyone so I’m going to be very clear upfront that this is not a classic egg and dairy ice cream. But, if you are looking for a quick 5 minute cool snack that resembles soft serve and is actually healthier for you- this is it.

When I’m super lazy and I have a ripe banana or two laying around, I just throw them into the freezer, peel and all. But my tip is to actually freeze banana slices:
->peel the banana and slice it up. Lay the slices in a single layer on a parchment-lined sheet pan (or whatever will fit in your freezer). Freeze. Store in a glass container or freezer bag.
Then you can just use as many slices as you want without the mess of peeling a full frozen banana or trying to get your blender to break down a full frozen banana. It’s really worth the extra minute to freeze them in slices.

Strawberry Nice Cream
1 cup frozen banana slices (about 1 banana)
1 cup frozen berries
splash of dairy-free milk (if needed to blend)

Place the banana slices and berries in a blender, blend until creamy.

Enjoy immediately or place in the freezer in an airtight lid for up to 2 hours.

NOTE: If you have a powerful enough blender you won’t need anything else (it takes about 1 minute in my Blendtec Twister Jar.) If your blender isn’t quite as powerful, add a splash of dairy free milk to get the mixture moving. Stop and scrap the sides if needed.
