Berry Smoothie

Berry Delicious Smoothie {gf, v}

How many times have you bought fresh fruits … only to have them go bad before you got around to using them?

Frozen fruits picked at the height of ripeness and then flash frozen. They are a better option in smoothies than fresh (IMO). Even if you forget about them or leave town for a few weeks, they’ll be in the freezer ready for you. No mushy, bruised, sad or moldy fruits. Plus they give your smoothie the slushy consistency that makes them so much more like a treat!

This smoothie uses frozen berries. I like to also use frozen bananas, but fresh is fine and will give the Berry Delicious Smoothie a little more creaminess. Adding a spoon of cacao powder gives the Berry Delicious Smoothie a little depth but it’s not a requirement.

Berry Delicious Smoothie

Big handful or two of greens (alway rotate greens so you aren’t eating the same ones every day)
1 cup coconut water (or preferred milk of choice)
1/4 of a zucchini
1 cup frozen mixed berries
2 bananas, ideally frozen
2 tbls collagen powder
1 tsp coconut or olive oil
1/4 tsp cinnamon
Optional: 1 tsp cacao powder, Ice- if your fruit isn’t frozen

Add the coconut water and greens to the blender, blender until greens are well pulverized. Add remaining ingredients and blend until smooth. Enjoy the Berry Delicious Smoothie immediately or store for up to 48 hours.

NOTE: Add additional liquid as needed to achieve desired consistency.

Pineapple Mint Smoothie

Pineapple Mint Smoothie {gf, v}

Key points for me when making a smoothie is to use frozen ingredients whenever possible. It adds that thick chill and avoids using ice, which will ultimately separate and water down a smoothie.

You gotta drink it so make this Pineapple Mint Smoothie to your liking! You might need more pineapple, mint or lime- that’s cool. Blend, taste, adjust.

Pineapple Mint Smoothie

handful or two of greens (mix this up, spinach, bok choy, even romaine!)
~1 cup coconut water
1/4 of a pineapple, peeled (ideally frozen)
1/4 of a zucchini (can also try cucumber)
2 tbls ripe avocado
juice of 1/2 lime
Handful of mint leaves, pulled from stem
2 tbls collagen powder
Optional: ice (if your fruit isn’t frozen)

Place the coconut water and greens in the blender, blend until the greens are well pulverized. Add remaining ingredients and blend until smooth. Enjoy your Pineapple Mint Smoothie immediately or store in the fridge for up to 48 hours.

NOTE: add more coconut water as need to achieve desired conistency. Add ice if the pineapple isn’t frozen.

Strawberry Banana Smoothie

A delicious breakfast treat that’s just the perfect amount of sweetness thanks to the strawberries and bananas. But this is a powerhouse smoothie thanks to the hidden greens and walnuts. A great way to use up those berries that are nearing the end.

Strawberry Banana Smoothie
1 cup frozen strawberries
1/2 frozen banana
1/2 cup walnuts
1 cup water
1 cup greens (Swiss chard, arugula, spinach)

Blend all the ingredients until smooth. Add additional water or ice to achieve desired consistency. Enjoy!
