SOS Breakfast (gf)

Shit on a Shingle. It’s probably THE worst name for a dish (IMO)!! Who thought ‘hey, lets add the word ‘shit’ into the title of this food dish I’m going to eat to help it sound appetizing and appealing‘!?!?

But, much to my dismay, it seemed to work. I remember my Mom making this for us and I remember quite enjoying it as a youth…or perhaps I endured it. We were at a little diner in a sleepy beach town in Michigan. There it was on the menu: SOS. I thought I’d forgotten about this dish, but it only took me a second to recall deep into my past because Shit on a Shingle popped right of of my mouth. ‘Oh, right!” others at the table exclaimed.

It’s been on my mind ever-since. I just couldn’t resist recreating it…. with a few healthy adaptions.

Toast: I shy away from gluten except for those ‘really worthy’ times, this isn’t one in my opinion, so I used sweet potato toast.

Gravy: Typically made with cream, I wanted to lighten this up. I could have use my cashew or nut cream, or I could’ve used full fat coconut milk- but instead I created gravy with homemade stock and gluten free sorghum four. So it doesn’t have the creamy white appearance of the classic dish, but I’m not bothered by that.

Try out my super simple, healthier, gluten free peasant version of this ill-named dish for your next weekend brunch. It’s hearty and delish!

SOS : Shit on a Shingle

1 tbls ghee or olive oil
1/4 white onion
2 celery sticks
1 lb grass-fed ground beef
3 tbls sorghum or other gf flour + 3 tbls cold water
2 cups broth
1 sweet potato (or use bread toast, if that’s your thing)
1 green onion or chive
Salt and pepper to taste

Preheat the oven to 400 degrees. Slice the sweet potato lengthwise. Toss with a little olive oil or melted ghee, sprinkle with salt. Place on a sheet pan and roast until for tender, about 20 minutes.

While the sweet potato toasts are baking, fine dice the onion and celery. Sauté in the ghee until softened. Add the ground beef and 1 tsp pink salt, breaking it up with a wooden spoon as it browns.

Stir together the flour and water until dissolved. Stir into the browned beef, then slowly add in the broth while stirring. Let simmer to thicken. Taste- adjust salt and pepper.

Spoon over the sweet potato (or other) toast. Sprinkle with chives or green onions. Enjoy.
