Need a warm soup for a chilly day? Need it in about 30 minutes? Done.
Use the saute function on the Insta Pot for the onions and meat, then pressure cook the rest. No Insta Pot? No problem. Simply saute on the stove, cover and simmer a bit longer to allow the flavors to meld.

Turkey Chorizo Chili Soup
1lb ground turkey
2 chorizo sausages
1 white onion
1 tbls ghee or oil
1/2 jalapeno (or the whole thing for more spice)
1 red pepper
1 yellow pepper
5 garlic cloves
2 tsp chili powder
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 tsp dried oregano
1 tsp salt
1 can crushed tomatoes
1.5 cups broth
Toppings: Greek yogurt, shredded cheddar cheese, sliced green onions.
Set the saute function on the Insta Pot. Add the onions and a dollop of ghee, sweat the onions for a couple minutes, remove.
Add the the turkey and chorizo with the salt and seasonings, saute until most of the meat is browned. Add the onions back in along with the peppers and garlic- saute another 2 minutes.
Add in tomatoes and broth. Pressure cook on high for 15 minutes. Allow to steam to release for 10 minutes. Taste, adjust seasoning as desired.
Serve with desired toppings.
