I don’t eat grilled cheese often, but when I do, I’m going to make it worthwhile.
These wildly delicious grilled cheese sandwiches need three things: Wine-Braised Green Leek Tops, a nice loaf of rye bread, and some mozzarella cheese and some butter …. ok, 4 things. Slather two pieces of bread with ghee, and cook them in a skillet topped with some melty cheese on one side and a pile of leeks on the other. Smoosh together once they are golden brown and enjoy to your heart’s content.

Wine-Braised Green Leek Grilled Cheese Sandwiches
Wine-Braised Green Leek Tops
Good, crusty bread
Mozzarella cheese (or desired melty cheese)
Ghee or butter
Optional: Pickled veggies on the side
Heat a skillet over medium-low heat. Butter 2 pieces of bread on one side and place buttered side down in the skillet.
Tope one piece of bread with the cheese, the other with the Wine Braised Green Leeks. Cover the skillet and let cook for 3-4 minutes or until the bread is golden brown. Keep an eye on it; lower and slower is better than high heat here.
Stack the two sandwich sides, cut in half and enjoy with a side of pickled veggies.
