Artichoke Hummus
1 can garbanzo beans (aka chickpeas), drain half of the liquid out
1 cup artichokes hearts
1 garlic clove, smashed
1 tbls tahini paste
juice of 1/2 lemon
1/2 tsp salt
Puree together all the ingredients in a blender or food processor until smooth. You may need to stop and scrap down the sides; add a few drizzles of water if needed to get the hummus to desired texture.
Taste, adjust salt and lemon. Serve in a bowl with a drizzle of olive oil (try my incredible addictive Spiced Oil.)
