We can never have enough smears in our arsenals.
This smear, or Kimchi Sauce, is just the thing you need to liven up EVERYTHING. It’s three ingredients, kimchi, Greek yogurt and olive oil, pulsed in a blender. Protein-rich and gut-friendly, I smeared this on roasted cabbage, seared green beans and grilled chicken and dipped both veggies and flatbread in it.

Kimchi Yogurt Smear Sauce
1/4 cup fermented kimchi
1/4 cup Greek yogurt
1-3 tbls extra virgin olive oil
Place the kimchi and Greek yogurt in a mason jar. Add a tablespoon of olive oil. Insert a stick blender and blend to combine, adding additional olive oil as needed to achieve the desired consistency. My preference is to keep some texture to it.
Use immediately or store in the refrigerator for up to 4 days.
