A dessert bar that eats like a giant Twix Bar. These Millionaire’s Shortbread Bars are better than the original, sugar-laden versions.
Nut butter and maple syrup stand in for the caramel layer and the base is simple with oats and almond flour. They come together fairly simply.

Millionaire’s Shortbread
Crust
1 cup rolled oats
1 cup Almond flour
3 tbls maple syrup or honey
pinch of salt
1/2 tsp vanilla
3 tbls melted coconut oil
Caramel Layer
1/2 cup nut butter
3-4 tbls maple syrup
1 tsp vanilla
pinch salt
Top Layer
80g dark chocolate
optional tsp of coconut oil
flaked salt
Directions
Preheat the oven to 350 degrees. Line a cake pan with parchment paper. Mix the base layer ingredients. Press into the pan and bake 20- 30 minutes until lightly golden brown.
Mix the nut butter, maple syrup, vanilla, and a pinch of salt together. Pour over the base layer. Place in the refrigerator and chill
Melt the chocolate and stir in the coconut oil. Pour over the caramel layer. Sprinkle with flaked salt. Place back in the refrigerator to set. Slice and store in the refrigerator.
