Whether you are giving up dairy or not, it’s really important to get more veggies in your diet every day. Doesn’t man you have to give up creamy, cheesy sauces, just means you need to get a little creative.
This cauliflower alfredo sauce is deceivingly creamy and delicious. It’s great over pasta or even other roasted veggies. I could see it over nacho chips, potato skins or even as a dip. This one is pretty similar to my Cauliflower Cheese Sauce but slightly different.
Cauliflower is low carb and provides antioxidants and phytonutrients while the nutritional yeast offers great b-vitamins to your diet.

Cauliflower Alfredo Sauce
2 heaping cups roasted cauliflower
1 cup white onion, chopped
3 garlic cloves, chopped
1 tbls avocado or olive oil
1 tbls lemon juice
1 1/2 tbls nutritional yeast
1/2 tsp salt
a few turns of fresh black pepper
1-2 cups water
Roast the cauliflower in the oven.
Heat oil over medium heat, add chopped onions and cook for about 5 minutes until the onions just begin to wilt and turn translucent, tossing often. Add the garlic, cook for another minute then remove from heat.
Place everything in the blender (the cauliflower, sauteed onions & garlic, lemon juice, nutritional yeast, salt and pepper) and blend until super smooth. Start by adding 1 cup of the water, then adding more as needed to achieve the desired consistency. Taste and adjust seasonings.
Toss with fresh pasta, drizzle over roasted veggies, on baked potatoes or over grilled chicken.
Notes: This is easy to adjust to your liking- I used super large garlic cloves for a real garlic zing. Extra lemon can offer a fun twist or additional nutritional yeast will give the sauce even more of cheesiness.
