chia seed pudding
1.5 cups water
1/2 cup (i used a mix of hazelnuts, sunflower seeds and brazil nuts)
1/4 tsp cinnamon
dash of vanilla
4 tbls chia seeds
Toppings: toasted coconut, nuts, berries, bananas, granola
Blend the water, nuts and dates for about 30 seconds. Pour into a mason jar with the chia seeds, cinnamon and vanilla. Add the lid and shake well. Give the jar a shake every few minutes to ensure the chia seeds aren’t sticking together.
Place in the fridge for at least 20 minutes to allow the chia seeds to soak and expand. Enjoy with fresh berries, granola or bananas.
Store in refrigerator for up to 5 days0
