I’ve never really thought of myself as a pudding girl. Maybe it’s because of those boxed pudding mixes filled with unrecognizable ingredients?
Blending up whole, real-food ingredients tastes so much better. Below I start you with the basics- bananas, cacao powder and some nut butter. That’s all you need. Then you can add in a little maple syrup for sweetness. A bit of espresso for depth. And/or bit of avocado for more thickness.
Enjoy it as is or turn it into a layered Chocolate Banana Pudding Cup, as noted below.

Chocolate Banana Pudding
2 large ripe bananas
1.5 – 2 tbls cacao powder
2 tbls nut butter of choice
optional ingredients below:
- Add a spoon or two of maple syrup for sweetness
- Add 1/2 of an avocado for a thicker pudding
- Add a shot of espresso or 1 tsp espresso powder for depth
Place the bananas, cacao powder and nut butter in a food processer, blend until creamy. Taste and adjust to your liking (more cacao powder or nut butter) and also with the optional ingredients.

Coconut Whipped Cream
GF Cookies, like these Simply Mills Sweet Thins
Firm bananas, sliced
Choose a small mason jar or a pretty cocktail glass. Crush a few cookies on the bottom. Add a couple slices of bananas. A few big spoonfuls of Chocolate Banana Pudding followed by the Coconut Whipped Cream. Repeat the layers. Enjoy immediately or store in the refrigerator for up to 3 days.
