Kale Parsley Gremolata
Gremolata is a bit like a poor mans’ pesto- sans the cheese and basil. In this version, I added a bit of kale to up the green anty. Spoon over roasted veggies, dips, grilled meats, like the cauliflower steaks in the photo.

Kale Parsley Gremolata
1 head flat leaf parsley
2 large leaves of curly kale, leaves pulled from stems
1 garlic clove
1 lemon
2 tbls olive oil
Smash the garlic. Mince it on the cutting board. Add the parsley and kale on top of the garlic and continue to chop it all together. Zest the lemon over the top. Scoop into a bowl, toss with the olive oil.
