Popped Sorghum Crunch Bar

This crunchy little energy bar uses one of my favorite snacks – popped sorghum! It’s like tiny popcorn, but easier on your digestive system. These are great for a snack or even for breakfast.

Get creative with your ingredients- any nuts and seeds will work. Get the kids involved by letting them ‘decorate the top’. I made one batch with pretzels – so fun.
Do add the flaky sea salt on the top – both popcorn and chocolate really come alive with salt.

Sorghum Crunch Bar

1/4 cup + 2 tbls popped sorghum
1/4 cup + 2 tbls toasted coconut flakes
1/4 cup oats
3 tbls almonds, cashew, pistachios, pepitas or other nuts
1/8 tsp fine pink salt
2 tbls almond butter
1 tsbls honey
2 tbls milk
1/4 cup dark chocolate chips
Flaked sea salt

Pop the sorghum, if you haven’t already.
Melt the chocolate: place in a cup, set the cup in a bowl of hot water.

Whisk together the almond butter, honey, milk and the pink salt. Lightly chop the nuts and seeds.
Stir in the 1/4 cup of sorghum and coconut flakes eat, the oats and nuts/seeds until well mixed

Pour into a small lightly greased dish and smooth the top. Stir the chocolate until smooth, pour over the top of the bars. Liberally sprinkle with flaky salt and scatter the remaining popped sorghum and toasted coconut flakes on top.

Place in the refrigerator for about an hour or until firm enough to cut. Store in the fridge or freezer.
