Roasting carrots take on a whole new level of sweetness. But served alone, they can be just a bit blah, even with the color and deep flavor. Enter this Herbed Garlic Sauce. A simple sauce to elevate a platter of carrots to stardom.

Roasted Carrots with Garlic Herb Sauce
2 dozen mini carrots
1 tbls olive oil
1/2 tsp pink salt
Herbed Garlic Sauce
1/4 cup toasted pepitas
Preheat the oven to 425 degrees.
Place the carrots in a glass, or oven-proof dish. Drizzle with olive oil and salt and toss well. Bake for 25 minutes until the desired texture is reached.
Place the carrots on a platter. Drizzle with the Herbed Garlic Sauce. Sprinkle with pepitas.
