Nut butters are awesome in cookies, used as a dip, slathered on toast or pancakes, inside chocolate cups or straight on a spoon. This one is no different – but it’s only going to happen during the fall so eat up!
Pumpkin Cashew Butter
1 cup raw cashews
3 tbls pumpkin puree or roasted pumpkin
2-3 tbls maple syrup
1/4 tsp pumpkin pie spice or chinese 5 spice
pinch of pink salt
Add all the ingredients in a blender or mini food processor, process until smooth. Taste, adjust sweetener as preferred
Store in the refrigerator.
