Sensuous snickers bites

If you have dates, chocolate, nuts and nut butter in your pantry, then you have everything you need to make my sensuous snickers bites. These healthy date snickers bites take about 5 minutes to put together (plus a little time for the chocolate to harden.

Processed snickers are loaded with crap food like corn syrup, highly refined oil and artificial flavors. These alternatives are the bomb with no refined sugar. Plus their super versatile – use your favorite nuts and nut butters. Choose a high quality chocolate and sprinkle a couple of salt flakes for an upscale finishing touch.

Dates are naturally sweet and offer a lot of energy- these little snickers bite bars are fantastic on hikes (these are a favorite among guests on my wellness vacation retreats), before a workout or anytime you need a boost. Or just when you need a sweet bite.

Happy eating,
~Monique

Sensuous Snickers Bites

~12 Medjool dates
⅓ cup almond, peanut, cashew or other nut butter
Handful of peanuts (or other nuts)
1/2 cup dark chocolate (like Hu Chocolate Gems)
Optional: flakey sea salt

Slice the date open on one side to remove the pit. Smoosh a spoonful of the nut butter inside the dates, stuff a nut or two in.

Set on parchment paper and repeat until all dates are stuffed.

Melt the chocolate. Drizzle over the dates or dip the dates in the chocolate to fully coat. Sprinkle with flakey sea salt, if using. Allow the chocolate to harden. Enjoy!

NOTES:

  • Change up the nut butter: try sunflower, cashew, peanut, walnut…. what is your favorite?
  • Use any of your favorite nuts. I’ve used everything from pistachios to macadamia to brazil.
  • Want to try a real fun boost? Add a spoon of jam inside the date!
  • For a smaller bite, cut the date in half, then stuff and dip each half.

Feeling adventurous? Spoon a little fig jam inside the date!
