Spring Roll Bowl
2 garlic cloves, minced
2 tbls tamari
1 tbls coconut sugar
2 tbls water
juice of 1/2 lime
1 serrano pepper, minced
1/2 english cucumber, chopped
2 cups shredded cabbage
1/2 bell pepper, chopped
1 carrot, grated
1-2 radishes, sliced thin
handful of fresh basil, mint, cilantro
Optional: Cooked chicken, tofu or shrimp
Toppings: toasted peanuts or cashews, chopped green onions, avocado
Whisk together the garlic, tamari, coconut sugar, water, honey, lime and pepper.
Toss remaining ingredients with the dressing. Top with the chopped nuts, green onions and avocado.
