Canned tuna fish has made an appearance in my pantry recently and I’m not mad about it
Lunch is ready in ~5 minutes.
This Apple Tuna Salad came together with random ingredients I had on hand, but it worked great and no mayo was harmed in the making. 😂
This is Mediterranean style. The apple and pistachios are the wow factor here! I think a can of cannellini beans would be great too, if I had one.
Think of this as a rustic recipe… Adjust to your liking and what you have.

Apple Tuna Salad
1 can tuna
1 green apple, skinned and diced
1 green onion, sliced
2 handfuls of pistachios
A couple of drizzles of olive oil
A glug of pickle juice (I used @Bubbies)
Juice one lemon
S&P
Salad fixings:
Torn romaine lettuce
Thinly sliced red cabbage
Sauerkraut (@clevelandkraut)
Parmesan cheese chunks
Hot peppers
Open the can of tuna, separate into chunks in a large bowl but don’t completely mash it apart. Add remaining ingredients and toss.
Place all salad ingredients in a large, shallow bowl. Top with the tuna. Drizzle the whole bowl with additional olive oil and any dressing that accumulated in the tuna bowl. Enjoy.
