I like butter. But there is something about those butter frostings that leave a waxy coating in your mouth. blech.
Enter the Avocado Frosting. It’s simply avocado, a little lemon, and powdered sugar. I’m fascinated by how well this worked out! I separated the batch and made two versions, one with a more distinct lemon flavor by adding lemon extract, and one using haskap berry powder for a berry punch.
Haskap berry is a sweet/sour superfruit grown in cold climates that has 3-4 times more anthocyanins and antioxidants than blueberries!
I stored these Avocado frostings in decorating bags in the refrigerator for 4 days, which makes squeezing out frosting shots super easy. I can’t tell you how happy I was to see the Avocado Frosting stay a lovely shade of green!
The Avocado and Haskap Berry Frosting in the photo above is adorning our Sweet Potato Brownie.
Happy eating,

Avocado Frosting
1 ripe avocado
~3 cups powder sugar
1 tsp lemon juice
Flavor options: lemon extract or haskap berry powder
Directions:
Begin whisking the soft avocado and lemon juice. Sift in the powdered sugar about 1/2 cup at a time until you reach the desired consistency. This should take around 3 cups. Decide if you want to add additional flavor.
Flavor options: I divided the frosting in half and made two frostings:
1. LEMON: Whisk in 1/4 tsp lemon extract
2. HASBERRY: Whisk in one 1 packet (1 teaspoon) of Haskap Berry powder
Use immediately or place in a decorator piping bag or a sealed glass jar and store in the refrigerator for up to 5 days.
