Warm, homemade tortillas are just unbeatable.
There was a place across the street from us in Denver where Grandma made the tortillas fresh every day until she was tired. Then she would go sit at the bar and enjoy some cocktails. If you arrived too late in the day, you were just out of luck.
The biggest thing here is to make these a few times to get a feel for the dough. Add a pinch of water or a bit more masa harina as needed. The dough should feel like good old classic Play-Doh.
Use these Blue Corn Tortillas as tacos (try with my Feta Fried Egg) or slice the tortillas into triangles and bake for a blue corn chip. They are as pretty as they are tasty.

Blue Corn Tortillas
- 1.5 cups blue corn masa harina
- 1 cup warm water
- 1/4 tsp fine salt
Mix together the masa harina, salt and warm water in a bowl using your hands or a spatula. Knead the dough until it comes together as a ball. This should feel like Play-Doh.
Notes:
-> The masa should not crack when you press it; if it cracks, work in a tablespoon of water at a time.
-> If the masa sticks to your hands, work in a little more masa harina.
Create 12-16 balls, cover with a damp towel and let rest for 5 minutes.
Heat a cast iron skillet over medium-high heat.
Place one ball between two pieces of parchment or plastic wrap. Press in a tortilla press or use a roll out with rolling pin.
Remove one side of the paper and flip into your hand to remove the second site. Then flip directly into the hot skillet.
Cook each side 30-45 seconds, then flip back to the first side for another minute. Set in a towel and repeat with the remaining tortillas.
Just before serving or to reheat: place the tortilla over an open flame burner for 30 seconds or until lightly charred, flip and repeat.
Wrap leftover tortillas in a ziplock bag, and keep in the refrigerator for up to 5 days. Reheat over an open burner flame or in a dry skillet. Freeze homemade tortillas for up to ~3 months. Heat a dry, cast-iron skillet over medium-high heat until hot. Lower heat to medium.
