Seriously- this Caprese Pasta Salad is going to be my new go-to salad for the rest of the summer, especially now that tomato season is upon us! It’s absolutely as delicious as it is gorgeous.
I cooked up a gluten free pasta in about 7 minutes, then sliced and arranged the tomatoes in the meantime. The rest of the salad is piled on from the grocery store olive bar —> pitted olives, marinated fava beans, sun-dried tomatoes, roasted garlic, peppadew peppers and fresh burrata to top it off.
Don’t over think it, pile this pretty platter with what you like and finish of with a few good drizzles of a quality balsamic vinegar and extra virgin olive. Boom.
Caprese Pasta Salad Platter
3-4 ripe heirloom tomatoes
1 box of gluten free pasta (I used Felecia GF Pasta , use your favorite pasta)
fresh burrata (mozzarella cheese)
fresh basil
balsamic vinegar and extra virgin olive oil (evoo)
1 container of olive bar goodies:
- a good variety of pitted olives
- marinated fava or broad beans
- sundried tomatoes
- roasted garlic
- peppadew peppers
Salt and pepper to taste
Cook the pasta according to package directions.
Slice the heirloom tomatoes and arrange in a ring around the outside of a large platter.
Drain the pasta and rinse with cold water. Toss the pasta lightly with the evoo and a pinch of salt and pepper. Pile in the middle of the platter. Place the burrata on top of the pasta.
Now drizzle everything with the balsamic and evoo. Pile on the olive bar goodies. Tear the fresh basil over the top and give one final drizzle with the balsamic. Enjoy!
Note: heirloom tomatoes are going to give you the best flavor (IMO) and the prettiest colors.
Optional: Lay the tomato slices on a bed of hearty romaine or leaf lettuce so you can get those greens in!
