If I could have a nickel for every post I’ve seen on the Feta Fried Egg….
Don’t overthink this, it’s an egg fried on top of feta cheese. The feta becomes crispy while the egg cooks.
Takes less than 5 minutes and it’s pretty darn good. I mean, a runny yolk egg with crispy fried cheese…
Eating this Feta-Fried Egg on its own is fine. Why not step it up a notch and make my Feta-Fried Egg on Blue Corn Tortillas.
Tips:
- A non-stick skillet. I found the best option was my cast-iron skillet.
- A bit of pesto, harissa, chili-crisp, salsa – this is optional but a great flavor booster!
- Eat it on a warm tortilla with a smoosh of avocado, pinto, refried or black beans or.

Viral Feta Fried Egg
1 egg
~1/4 cup crumbled feta cheese
drizzle of oil or ghee
Optional: Pesto, harissa, chili crisp or salsa, red pepper flakes or black pepper
For a taco option: Avocado, lime and 1 blue corn tortilla
Lightly coat a medium skillet with ghee, oil and place it over medium heat. Once the pan is warm, sprinkle the crumbled feta in a circle; allow the feta to begin to soften and melt.
Leave the feta to soften and melt a bit. If using, spread the pesto in the center of the melting feta.
Carefully crack the egg on top of the pesto/salsa (or just over the feta). Sprinkle with red pepper flakes or black pepper. Cover the skillet and cook until the egg whites are fully set.
Enjoy as is, or warm a blue corn tortilla directly over a second burner.
Smoosh the avocado on the tortilla, squeeze on a bit of lime, add the Feta Fried Egg. Top with a little salsa. Fold in half and enjoy!
