Snowball Cookies were a staple on our cookie tray. Those delightful cookies covered in powdered sugar that melt in your mouth.
These GF Snowball Cookies melt in your mouth just like regular snowball cookies, but they’re gluten-free for those that need the option!
GF Snowball Cookies
3/4 cup blanched almond flour (Kirkland/Costco brand or Blue Diamond works great)
2 tbsp unsalted butter, melted
1 heaping tbsp maple syrup
2 tbsp powdered sugar
Directions: Makes 16 cookies (1/2 tablespoon-sized cookie scoop).
Preheat the oven to 350 degrees and line a sheet pan with parchment paper.
Mix the almond flour, melted butter, and maple syrup. The dough should be scoopable; adjust with a spoon of almond flour or a drizzle of maple syrup if needed.
Scoop into small cookies; I used a 1/2 tablespoon-sized cookie scoop.
Bake for 12 minutes or until the bottoms are golden brown– overbaking is better than underbaking in these, as the cookies will become more delicate and meltable upon bite… the way a classic snowball cookie does.
Let cool completely. Place the powdered sugar in a fine mesh strainer and shake over the cookies. Enjoy immediately or store in an air-tight container at room temperature or freeze for longer storage.
