Salads are only boring if you make them that way.
Have some fun with this delightful Mango Blackberry Salad. Don’t be afraid to toss in a few fresh herbs, like mint and basil.

Mango Blackberry Salad
1 mango
1/2 pint blackberries
1 avocado, ripe
2 cups arugula
2 cups romaine lettuce
3 Persian cucumbers
1/3 cup toasted pecans
Optional: Flaked salt, fresh herbs (mint, basil, chives and/or parsley)
Dressing
1/4 cup olive oil
1 tbls maple syrup
1 tbls balsamic vinegar (use a good, thick, aged, balsamic; don’t cheapen this)
1 lime, zested and juiced
1/4 tsp ground cumin
1/8 tsp salt + pepper
Place all the ingredients in a mason jar and shake well. Taste and adjust seasoning/sweetness as desired.
On a large platter, layer the lettuces. Slice the cucumbers, mango and avocado. Decorate the lettuce with these. Add the blackberries and pecans. Drizzle the dressing over the top. Sprinkle with flaked salt and tear fresh herbs over the top.
